This document describes converting DVD to AVI (and vice-versa). An AVI video file is a container of audio/visual componetsn, with no guarantee that it may played on a particular system. The AVI fileformat was originall created by Microsoft. DivX is an enhanced video codec originally created by Microsoft. The AVI codec is based on MPEG 4 and by combining MPEG 4 and MP3 sound, these video formats are digital quality. The AVI codec offers a 10:1 compression ratio (i.e., 10 MB input video file, converts to a 1MB DivX).
See section 11 of dvd for more information on converting avi to dvd

A number of UI tools exist for manipulating AVIs into different formats. Being UI's most of these tools require an underlying library to be available to perform the actual transcoding.
This is gui that supports DVD to AVI (and other codec) decoding. See handbrake.m0k.org. This particular app is geared to MacOSX but there's source available that compiles under linux.
A Java based Media Converter from maemo.org for converting videos from any normal video format to the Nokia specific mpeg4 divx format. The maemo mediaconverter uses mencoder (mencoder is closely related to mplayer) for the actual encoding of video. As meediaconvert is java, it runs on OSX, Linux and Windows, as long as mencoder is installed.
